White Chicken Chili

  Absolutely great tasting and low fat and healthy also.  Here you go Jeanie.

 2 tablespoons of olive oil
1 to 1 1/2 pounds of chicken breasts cut into chunks
1/2 medium onion, chopped.
2 cups chicken broth (16) oz
1 can diced green chiles (4) oz
2 cans of great northern beans (15.5) drained and rinsed.
1 cup of white button mushrooms, quartered, ( I like the baby bella's also)
1 tsp cilantro, chopped.
2 tablespoon of southwestern seasoning,  bam!
  

       Heat the oil in a large pot over a medium-high heat.  Add the chicken and cook until lightly browned and no longer pink in the center.  Remove the chicken to a plate and set aside.  In the same pot add the onion, garlic, and mushrooms.  Cook until they are tender but not browned.  Stir in the chicken broth, green chiles, beans, cilantro and seasoning.   Return the chicken to the pot, cover and simmer for 5 minutes or until the chicken is cooked through.  Top with shredded montary jack cheese and fat free sour cream.  This is a phase 1 recipe for those doing south beach.  Makes 6 servings.

Thank you so much Julie!  I shall try it tomorrow night as I have tea on its way for tonight.  I've been out most of the day and have only just read your e-mail.
What are norther beans, cilantro and southwestern seasoning?  You could give me an idea by reading the side of the pack.  I have a cupboards full of spices so am bound to find something similar and throw it together.  I love experimenting and trying new foods.

I had to look up your Great Northern beans, they sound similar to our butter beans or lima beans. Pity we don't get the Monteray Jack cheese here though, I always buy it when I'm in the States. I also love your pepperjack cheese which we don't have either! Jeannette xx

I definitely have to try this one.  It sounds so simple and a quick meal but super yummy.  I'll have to double because my son could eat the whole shebang himself.  Chris
